Slice apples into ¼" slices and remove any seeds. Insert sticks through the bottom.
Add chopped chocolate to a heat-safe bowl. To melt the chocolate, place the bowl over a saucepan of simmering water (making sure the water doesn’t touch the bottom of the bowl). Stir the chocolate occasionally until completely melted (add coconut oil or butter if the chocolate needs to be thinned out more).
Dip each apple slice in chocolate and coat the entire slice. Transfer to a serving tray (lined with parchment paper if needed). Add the toppings right away. Refrigerate or freeze until solid.
