Scoop out and mash the avocado with a fork. Squeeze lemon juice and add a pinch of salt and pepper. Mash them all together and set aside.
In a large mixing bowl, place the greens. Then, add the apples, cucumber, feta cheese, quinoa and toss to combine well.
To prepare the dressing, in a small bowl, whisk honey, olive oil, lemon juice and a pinch of salt. Pour the dressing over the salad and toss until the salad is evenly coated.
Using a cooking ring, set the avocado mix as the base and spread it evenly with the help of a spoon. Then, layer the salad. Set it in tight and carefully pull out the cooking ring. Top with lettuce and apple slices. Garnish with the dressing and pomegranate molasses. Serve immediately.
